Lettuce wraps originated in China but are popular throughout Southeast Asia. Especially in Thailand as larb kai. “Teriyaki” is thought to have originated in 17th century Japan and means “glossed/glazed grilling or searing.” In our house, Teriyaki Chicken Lettuce Wraps were inspired by hot weather and busy schedules. In addition the cool combination of fresh summer herbs: cilantro, basil, green onion, and mint.

Make your own roast or grilled chicken or save time with ready-to-eat rotisserie. Therefore, This recipe can easily be adapted to tacos, tortilla wraps or sandwiches. In addition, If you want to keep it light, low-carb and gluten-free, stick with lettuce wraps. If you’d like to make it a meal or more filling, add rice, Asian slaw and put it in a tortilla wrap. In conclusion: It’s all about the sauce!

The Falcons and the Braves seemed to be the perennial underdog teams. Therefore, Atlanta residents never imagined they would host the Olympics Games and welcome the world to the home of Martin Luther King, Jr. and Coca-Cola. In addition, Smyrna was the boonies and we drove down gravel roads to fish and swim at Lake Allatoona. On the other hand, My mom, Margaret, was a working mom; public schools “Teacher of the Year.” She also was a restaurant owner, fearless dodge ball coach and player to her fifth grade students. Therefore, with three kids and a full-time career, being fast and creative was a necessity in the kitchen. Asian International markets weren’t around yet. Therefore, channeling our Southern and Asian heritage, seasonal and fresh, local ingredients found their way to our table.

These teriyaki chicken lettuce wraps are perfect for warm weather. In addition, party appetizers or every day: delicious, fresh and with our sauces, super easy! An easy way to turn plain roasted or rotisserie chicken into an Asian gourmet meal or appetizer; without turning on the stove. Can also be made with beef, pork or vegetarian-friendly with tofu.

Teriyaki Chicken Lettuce Wraps

Ingredients:

1.5 cups roasted or rotisserie chicken (chopped)
¼ cup fresh green onions (chopped)
1 tablespoon fresh mint (chopped)
1 tablespoon fresh basil (chopped)
½ teaspoon roasted sesame oil (a.k.a. Chinese sesame oil)
¼ cup WILD WILD EAST Asian BBQ & Teriyaki sauce
¼ cup YOU SAUCY THING soy ginger Vidalia marinade
¼ cup peanuts, cashews (crushed) or sesame seeds
8-10 leaves lettuce (iceberg or buttercup leaf lettuce work well or cabbage leaves)

Instructions:

1. Toss and coat roasted/rotisserie chicken, herbs, and onions with YOU SAUCY THING soy ginger Vidalia marinade and sesame oil.
2. Assemble wraps: put a small scoop of chicken mixture in lettuce leaves.
3. Drizzle each lettuce cup with WILD WILD EAST Asian Teriyaki BBQ glaze and garnish with crushed peanuts, cashews or toasted sesame seeds.
