Recipe Video: Harvard Hottie Napa Slaw!

This Asian-inspired slaw is one of my go-to favorites for an easy, versatile and flavorful dish that can be a light vegetarian meal or topped off with grilled fish or chicken or a zesty side and topping to BBQ, fish tacos, ribs, burgers, pizza and more. No mayonnaise and dairy-free– perfect for hot weather picnics and summer potlucks!

Nutrients

Any combination of slaw vegetables work fine. For slaw, Napa cabbage (aka Chinese or Korean cabbage) is light, crunchy but mild-tasting. Don’t let the mild-taste fool you, Napa cabbage is loaded with antioxidants and low in calories. There are many ready-made “superfood” slaw mixes out there with kale, cabbage, chard, red cabbage, carrots, broccoli stem–or make your own (shop and support your local farmers market and see what’s in season!). Kale is an excellent source of vitamin K, vitamin C, vitamin A, manganese, and copper; a very good source of vitamin B6, fiber, calcium, potassium, vitamin E, and vitamin B2; and a good source of iron, magnesium. It all works well and doesn’t really require marinating time.

A nod to my alma mater and a popular recipe featuring My Sweet Hottie peachy ginger sauce. Keeps well for outings, potlucks, picnics (travels well) and a goes-with-anything dish. It’s fast, easy, and healthy pairing with many “comfort foods” and isn’t limited to Asian menus.

Traditional Dishes

Traditionally, Chinese folks and salads didn’t mix. Stir fries, yes. Raw vegetables, no. My grandma avoided salads like the plague. I finally found out why. In some Asian and Latin countries, water is still non-potable and you have to boil your water before drinking tap water. Eating salads (rinsed in tap water) made you very sick! Traditions die hard especially when they are grounded in truth, and granny was having none of it. A good reminder when traveling…

Enjoy as side or with grilled chicken, seafood, in a fish taco, wrap or burger. (Variation: Instead of cabbage, try it with fresh kale or super food slaw mix. The zesty blend of citrus and ginger counterbalance the strong flavors of hearty greens. Even non-kale fans like it!)

Asian Slaw: No mayonnaise and dairy-free-- perfect for hot weather picnics,potlucks! The zesty blend of citrus and ginger creates a slaw everyone will love!

Ingredients:

2 c shredded Chinese or Korean Napa cabbage, kale or mixed greens
1/4 cup shredded carrot
1/4 cup mild sweet chili sauce or My Sweet Hottie sauce
1 t Asian or dark roasted sesame oil
2 T chopped green onions, fresh mint, basil or cilantro
Crunchy mix-ins (optional): dash of white pepper, toasted sesame seeds, crushed uncooked ramen noodles or chopped peanuts or roasted soy nuts- YUM!

Instructions:

Toss together well. Enjoy!
