Flowered Garlic Chives, Red Pepper & Chinese Sausage Stir Fry

Not served in any restaurant, this is Mama’s childhood favorite stir fry dish features a new Asian vegetable; flowered garlic chives. In addition, it contains an uncommon but delicious tofu product; pressed and seasoned bean curd. Therefore, this dish has converted many a tofu-challenged eater. Also, this dish has been a favorite during the many years teaching and serving this dish.

Another delicious, authentic feature is the Chinese sausage; which is only found in street markets or in an Asian supermarket (non-refrigerated, next to meat section. Make sure to soak in hot water to soften before cutting!

Use one or your favorite combination of stir-fry vegetables. The Chinese Southern Belle prefers bok choy, Chinese flowered garlic chives, carrots, red peppers and smoked/baked tofu.

The Three G’s (ginger, garlic, green onion) are the key!

Prep Time:

35 minutes

Cook Time:

5 minutes

Feeds:

2-3 people

Ingredients:

3 c bok choy, sliced
1/2 bundle Chinese garlic chives, sliced
1-2 c sliced red peppers (or carrots)

1 T veg oil
1 T minced garlic
1 t minced ginger
2 green onions, sliced
1 T soy sauce
1 T oyster (or shitake mushroom) sauce
½ t black or white pepper
Drops of sesame oil

Optional: 1 c savory/baked tofu strips, 1 c Chinese sausage, sliced

Instructions:

1. Stir fry 3 Gs in vegetable oil first, medium high heat.
2. Add vegetables, except chives, and sausage/tofu with sauce, stir fry 2 minutes.
3. Add chives last, toss to heat.
4. Garnish with scallions and few drops sesame oil.
5. Serve immediately with rice or noodles.
