Natalie’s 1-Minute Stir Fry!

Need a break from fast food takeout or need home-cooking help? This stir fry is so easy, delicious and healthy, we enjoy it every week. (Video Demo below)

  • No special wok or tools needed. See No Chopping, No Stove adaptations below. Looking for a good knife? Here’s our Favorite Kitchen Tool
  • It can be meat, vegetarian or mixed
  • One vegetable (what do you have in the fridge?) or a medley
  • If you don’t have fresh or frozen raw meat, use pre-cooked chicken strips (fried or grilled), rotisserie chicken or any leftover e.g. steak cut into strips are fine.
  • Serve it over rice, noodles or go low-carb over salad greens or eat by itself. Kids love it over pasta, e.g. Asian noodle bowl or as Asian tacos with tortilla wraps!

This stir fry dish that highlights the color and flavor of fresh, seasonal vegetables with or without meat. It’s fail-proof for “non-cooks” and authentic, scratch-cooking quality for serious chefs.

Popular vegetables include: Bok choy, Napa cabbage, Chinese broccoli (gai-lan), shitake mushroom, spinach, mustard greens, pea greens/sprouts, broccoli, carrots, celery, peppers, zucchini, chard, even shredded potato! Experiment with new vegetables from the farmers market or your garden!

Can’t chop? Only have a microwave? Here are simplified adaptations.

  • Get pre-cut vegetables or superfood/slaw kits
  • Grab a handful of veggies. If you want carbs, put over leftover rice, cooked noodles or even baked potato in a microwave-safe bowl or plate.
  • Drizzle sauce over all. (If your vegetables are chunky cut like “stir fry” bag vs. shredded slaw, then add 1T water into extra sauce (3 T) and steam/cook +1 min until desired tenderness)
  • Cover and heat for 2 minutes.
  • Meat-lover? Top with grilled meat or fish. Drizzle more sauce on top. Deelish!

Eating healthy doesn’t mean only salads. Chinese stir fry isn’t just oily “drowned in brown sauce” takeout. Authentic Asian home cooking doesn’t have to mean hours of chopping, shopping or require special equipment like a wok and cleaver.

Ingredients:

2 cups fresh vegetables, julienned (Any combination: bok choy, cabbage, carrots, zucchini, red pepper)

[Timesaver Tip: 2 cups Superfood or Slaw mix]

1/3 cup You Saucy Thing Soy Ginger Vidalia cooking sauce (or your favorite teriyaki or soy ginger sauce)

1 T vegetable oil

¼ t toasted sesame oil

Instructions:

Place skillet on medium-high heat. Add vegetable oil and wait 30-60 seconds until pan is hot. Add vegetables and sauce to hot pan. Stir fry 1 minute. Drizzle with sesame oil. Serve hot with rice, noodles or as a side. Optional: Top with grilled meat, rotisserie chicken or roasted tofu.

Easy, Creative Variations (Natalie’s Leftover Makeovers :)

-Fried Chicken Stir Fry: Mix in sliced rotisserie or fried chicken with vegetables. Add extra sauce if desired.
-Asian Bowls: Serve Stir Fry over Brown Rice. Top with grilled chicken, shrimp, beef, pork. Drizzle with extra sauce. Garnish with toasted sesame seeds and chopped scallions.
-Chinese Spaghetti: Serve Stir Fry over any shape cooked pasta. Drizzle with extra sauce.

*MAKE YOUR OWN SAUCE – DIY From Scratch -- Recipe below, mix all ingredients together. (Double recipe if you like extra sauce or keep in fridge for later.)

1/3 cup naturally brewed soy sauce
1/4 cup water
3 T hoisin sauce
2 T rice wine (or sherry)
1 T rice vinegar
1 T sugar
1 T corn starch
1 t toasted sesame oil
1/8 t white pepper
1/8 t black pepper
